.......... [DEV-3919] lowered optimizations -O3 -> -O2 in release profiles

-O3 was just to differentiate the builds. We've been building releases
with -O2 up to now, and seeing as -O3 might overeagerly optimize,
potentially causing hard to diagnose bugs, go back to our old ways.
